OXTAIL COCO-BREAD SANDWICH WITH SLOW BRAISED PULLED OXTAIL, TING IRIE

It’s rare to go anywhere and be surprised, but I love the whole vibe and enthusiasm of this Jamaican restaurant and have to say this sandwich is super interesting and delicious. See tingire.com

DUCK FAT FISH & CHIPS, SEAN CONNOLLY AT DUBAI OPERA

This dish always reminds me of being back in England where the best fish and chips are cooked in animal fat, using great agria potatoes.

CAMEL BURGER, SWITCH IN DUBAI MALL

PEA SOUP WITH WAGYU BRISKET, KOHANTEI JAPANESE WAGYU RESTAURANT

At this authentic Japanese restaurant in Downtown, the pea soup cooked with wagyu brisket is the closest dish to my mum’s ham and pea soup. It’s a beautiful dish which brings back many fond memories. It just goes to show, you can travel all over the world but ultimately, all dishes share the same message – each country just has its own interpretation.
